Sunday Dinners and get togethers

Hey fam! I loved our sunday dinner! Thanks for the ideas tiff! I think we should do healthy meals at every get together from now on. We could even incorporate our healthy desserts that we've if we need that extra sweetness! Jess
I'm feeling so much better. I think it might be from adding all different types of grains to my diet, or maybe it's because I'm eating so many more fruits and vegetables! Whatever it is I love it, and I'm going to keep doing it! Just thought I'd share. :)

Rice and Almond milk recipe

First and foremost! You need a top of the line blender like Vita-mix (brandon mentioned three others but I can't remember.) It won't work if you don't have one. The flavor is not the same.

Rice Milk

1 cup cooked brown rice
1 cup water
blend 3 minutes on high

then add enough water to = 6 cups of liquid. Blend for 1 min. Add 3 T. Xagave, 1 tsp. real salt, 2 tsp vanillak flavoring, or whatever flavoring you like. Strain 3 times with a cheesecloth.

Almond Milk

use blanched raw almonds. Soak overnight, or for 24 hours. Drain off water, put in blender with 1 cup fresh water. Complete steps for rice milk. (You can even add 1 T. sesame seeds.

GMO!!! BEWARE!!

Watch out for Genetically modified foods! I was researching sweeteners on that "delicious organics" link, and I found a page on GMO's and how corn and soy beans are the two foods genetically altered the most, and how they are the two most common ingredients in foods! It was saying on that website how it acts as a toxic poison to the corn fed animals from feed lots. What happens to us when we eat the sick animals? (eat grass fed animals) Let alone what happens when we eat the altered corn, high fructose corn syrup, soybeans, or any product with soy. It's no wonder I'm intolerant to these two foods! Start reading labels. They are in everything! I bet everyone is intolerant to soy and corn. Brandon from that nutrition class didn't endorse soy at all. All his recipe's call for rice or almond milk. He taught us how to make them as well! Love Jessi

Mmmm yummy pancake topper!

I made the pancakes, delicious! I then topped it with Matt and KL's fruit salad recipe. However I didn't have pinneapple, so I used the coconut milk, pureed it with canned peaches, and added a tsp. of vanilla. I didn't add sweetner at all. It was so good on the pancakes! Try it!

Multigrain Flour Mixture

2 C Kamut
1 C Spelt
1 C Buckwheat
1/2 C Quinoa
1 C Hulled Barley

I had some grief grinding these. I think it is because I mixed them all and ground them together. Next time I'm going to grind them seperately.

Dad's Pancakes

3 1/2 cups flour (spelt, kamut, quinoa, flax, rice)
1/3 cup Xagave
3 Eggs
3 tsp Rumford baking soda
1 1/2 tsp real salt
3 TBs Olive Oil
3 cups milk (rice, almond, goat, cow)

Pour onto hot griddle and enjoy! (cooks pretty fast)
*Blended canned peaches makes a good topper (even better with a little Xagave drizzled on too)!

Good Grains

We missed you Joelle and Brant at the Healthy Cooking class with Brandon. There was a lot of people there at KeriLyns, despite the heavy snowfall! Everyone that came was glad they did! I was totally inspired to make a conscious effort toward better health. Our bodies are the only place we have to live! I want mine to be a lean clean healthy machine! He (Brandon) demonstrated how to incorporate more grains into our diet and he was a living testimonial to how beneficial this is. Amaranth, Quinoa, Kamut, Spelt, Buckwheat, Hulled Barley were the main grains he used to make "Dads Pancakes", beautiful loaves of bread and yummy scones cooked in coconut oil (which by the way I learned has many benefits, one that it is a medium chained triglyceride (sp?) which is converted to energy quicker and less likely to be stored as fat, even though it is full of saturated fat) it is also the safest oil to use in high heat cooking since to doesnt transform when heated like other oils (but you probably allready knew that). I learned that Amaranth is the number one nutritous grain, with Quinoa and Kamut following closely on the nutient level. He used Rumford baking soda in his cooking cause it dosent have aluminum in it like regular store brands. He is a huge fan of Xagave for sweetner, since it is the lowest on the insilin spiking levels 30 - 35, where sugar is at 90 and honey at around 80 I think he said. White agave has recommended daily allowance of calcium for women in one tablespoon! Xagave is made from both blue and white Xagave which contains more fiber and nutrients than just getting one or the other. There was so much information shared. Maybe Mom, KeriLyn and Jess can share what they remember. Anyway - sorry for going on and on, I'm just excited about getting on the path to better health!

Baby Booty Wipes

Here is the recipe for the homemade baby wipes that are so wonderful for little bums! :D

2 Cups Water (purified)
1 TBSP Aura Cacia Sweet Almond Oil
1 TBSP Dr. Bronner's Almond Pure-Castile Soap
5-10 drops Lavendar essential Oil
1 roll paper towels

I have a round container to fit the paper towels, so I cut the roll in half, pull out the inner cardboard tube which is where I pull the wipes from when using, and then pour the mixture over the paper towel roll.

No Hurry Vegetable Curry



This was surprisingly yummy! It's a crockpot recipe off FFV (fatfreevegan.com) in the Eat to live section. Let me know if you want me to post the recipe. I didn't add the beans because Matt doesn't like the way they squeak on his teeth :D I cooked it on high for 4 hrs, which was perfect. This picture is taken before the peas and the Coconut milk were added. The kids even gobbled it all up (Ella had thirds). Let me know what ya think.

Spin off of MOM'S GRANOLA


I make these every week and today's batch turned out really yummy. I've had 4 already! Yikes! I need to pace myself or I'll be making them twice a week. These are usually my grains for the day. This is my modified recipe:

Mix:
5 cups rolled oats
1 C. Coconut, unsweetened, shredded
1 C. Chopped Almonds
1 C. Wheat Germ (however, I only had about half a cup but I think the flax meal must have made up for it)
1 C. Flax Meal
1 C. Sesame Seeds (didn't have any)
1 C. Sunflower Seeds, raw
1 C. Soy Protein, vanilla
1 C. raisins (forgot to add to this batch)
2 TBSP Cinnamon (little more than this actually, I love cinnamon :))
In another bowl mix:
1 C. honey
1 C. water
1 C. unsweetened applesauce
1 tsp. Vanilla
Then mix wet mixture with dry.
Press into cookie pan and smooth.
Bake @ 250F for 2 hours. Using spatula to cut into bars.

(Yes, that IS plastic that I store them in ;D)

Fuhrman's Fudgsicles









Mmmm! These are my favorite treat so far. And SUPER quick and easy to make.














Fuhrman's Fudgsicles:

2 bananas
1 cup raw cashews
3 TBSP Cocoa Pwdr (Non-alkalized is best)
1 tsp Vanilla

Blend it all up, dollop into ice cube trays, freeze for 2 hrs, enjoy!

Fat: 14 gms, I think, in entire batch

That's a HUGE grapefruit!


Matt bought these grapefruits (which are definitely a meal in themselves) and I just had to get a picture of it next to Ella's head so you could see the size of this thing.
